A typical North India meal finishes with a cup of hot tea, Chai as it is called. It is considered very soothing and after having a hearty meal it is supposed to help in digestion as well. There are many a things that can be added to it like cardamoms, ginger and other herbs to add to taste. It is very easy to make a Chai and here’s my simple recipe for it.

Bring 1.25 cups of water to boil in a pan on a stove top and add 2 teaspoons of Lemon-pekoe tea and let it simmer for 3-4 minutes.
Add 0.75 cups of milk (3.25%, my recommendation) and bring to boil again, let it simmer for 1-2 minutes. Add sugar to taste…It’s ready.
